I've updated the recipe and kitchen tip for January. I made popovers for the first time last Sunday. Seth and I loved them, so it's the featured recipe. I served the popovers with a salad and rotissarie chicken. I don't know why they're called pop"overs" they should be more appropriately named pop"ups". When they bake the steam inside creates a hollow center and the tops pop-up and turn a deliciously crunchy golden brown.
Popovers are so good! When I was in NYC in August, my favorite place I ate was called "Popover Cafe" and it was delicious! I wish I were around to taste yours!
